Kombu has natural sugars that give it the mellow freshness for which it is known. Use Whole Leaf Kombu to make dashi, the base for miso soup, other soups stocks and marinades. It can also be used as a wrap for curing or cooking fish, infusing it with sweet flavor while retaining moisture.
